MY BEST WHOOPI PIE RECIPE


 
I have been making Pumpkin Whoopie Pies for the past two years trying to perfect the recipe and by golly "I DID IT". This recipe is my perfect blend and yes I am so sharing it with everyone because it is a must have. If you do make them please let me know how they came out.

The following recipe will yield 28 whoopi pies

INGREDIENTS
Whoopie Pies
6 cups all-purpose flour
2 teaspoon baking soda
2 teaspoon baking powder
1 tablespoon ground cloves
1 tablespoon pumpkin spice
3 1/2 tablespoons ground cinnamon
1/2 tablespoon All spice
2 tablespoon ground ginger
2 teaspoon salt
4 cups firmly packed dark-brown sugar
2 cup vegetable oil
6 cups pumpkin puree (I always use libby's)
4 large eggs
2 teaspoon vanilla extract
Creamy Cream-Cheese Filling
2 stick butter softened
2 - 8 ounce cream cheese also softened
6 cups confectioners' sugar
2 teaspoon vanilla
Preheat oven to 350 degrees.
Use nonstick cookie sheets or line cookie sheets with parchment paper
Use a hand whisker do not use an electric beater

DIRECTIONS
Making the Whoopie pies
In a large bowl, whisk together all the dry ingredients from the flour to the salt ; place to the side. In another large bowl, whisk together the brown sugar and the vegetable oil until mixture is completly blended. Add pumpkin puree and whisking until combined. Add eggs and vanilla and whisk until well combined.
Slowly combine the flour mixture over the pumpkin mixture and whisk them until blended. The mixture will be a little sticky that’s when you know it’s at has been mixed correctly.
Using a large heaping tablespoon Drop it onto the prepared cookie sheet being sure to place them at least an inch apart for expansion. Place in the oven and bake for 15 minutes.
Do not overcook as they will continue to cookie once they are on the racks cooling. Place on cooling racks to cool down.
Creamy Cream Cheese filling
Beat butter and cream cheese until nice and smooth. Add confectioners' sugar and vanilla, continue to beat until very smooth
Once the whoopie pies have cooled you will spread the filling onto one half of a whoopie pie and Sandwich with another pie. I wrap each one individually in plastic wrap. You must store them in a Refrigerator. The whoopie pies can stay good for up to 3-4 days once in the refrigerator.
